A Week of Hearts and Love

 Welcome to a week of posts dedicated to all things heart shaped and heart felt and heart warming!

Each day this week I am going to try and share something with you in the run up to Valentine's Day this Saturday!

I'm starting the week with this recipe for a Valentine's day dessert you can make for that special someone! 

I am naming it the Jewelled Heart Cake and you can maybe see why from the photos as the raspberries look like red jewel hearts in it.


It's light and moist and sweet, and perfect with whipped cream or icecream melting over it when you eat it warm from the oven!



Here's the recipe:   Jewelled Heart Valentine Cake

Preheat oven to 180 degrees C or 370 F

4oz butter
4oz fine sugar
2 medium eggs
5oz plain flour
8oz white chocolate chips
4oz fresh raspberries

Method

Grease and line a baking tin 8"x10"

Place the butter and half the white chocolate chips in a small saucepan and heat gently until melted.
Whisk the eggs and sugar together in a large bowl.
Add the sifted flour and the melted butter/chocolate mixture and fold together gently.
Carefully stir in the remainder of the chocolate chips and the raspberries.
Pour the mixture into the tin and place in the oven for 30-40 minutes until golden.

Serve warm with whipped cream or ice cream and enjoy each mouthful!
